Pantry Party Lentil Soup. There’s even a plantain in there which added great flavor and texture to the pot. Two day old bread pan toasted into some crispy and spicy croutons. I usually make a big pot of hearty soup over the weekend for everyone to enjoy during the week. The ingredient list for this one is long as pots of soup like this evolve as I go but it’s really simple. Sadly, they never happen exactly the same way twice. The beauty is, each is always delicious and full of things I love. Sometimes it all comes together with just a few ingredients, sometimes I like to use up as many of the bits and bobs I have kicking around as I can. Made a big mess cooking this one up, but I was able to clear out the crisper!
In this pot and in this order: Olive oil, Onion, kosher salt and pepper, Leek, Maitake, Celery, Carrot, Marsala wine, Swiss chard, Napa cabbage, Sweet potato, Plantain, Tomato paste, Ketchup, Black lentils, Veg stock and water, Soy sauce, fresh Oregano, fresh Thyme, Bay leaf, Black garlic salt, Silk chili flakes, Dijon, Parsley, Flaky sea salt and fresh ground Pepper. Please use this as a framework to create your own! The order beyond the first few ingredients isn’t one that’s set in stone. It’s hard to go wrong.
